HERE is an interview with a business person who runs the Danu traditional Maroi Napakpi Fermented Soya Bean production in Pindaya Township of Danu Self-Administered Zone of Shan State (South).

 

Q: Please can you tell me your name and address.

A: My name is Daw Khin Mi Mi from Ywar Thit Ward of Pindaya Township.

 

Q: When did you start the Danu traditional Maroi Napakpi Fermented Soya Bean production?

A: I have been running this business for more than 20 years.

 

Q: Could you tell me the processes?

A: The processes go 1) it takes five hours to boil the spicy dried fermented Soya bean seed, 2) we grind the boiled bean seeds with the machine, 3)we have to slice the Maroi Napakpi into normal sizes, 4) we add the Maroi Napakpi into the ground spicy dried fermented soya bean seed, 5) we add a few salt and seasoning and we stir, 6) we roll the spicy dried fermented soya bean into a ball, 7) we beat the round balls with a stick to be round flat ones, and 8) we put the beaten flat of spicy dried fermented soya bean on a bamboo raft for drying under the sun and we get the flats of Maroi Napakpi Fermented Bean.

 

Q: Where do you transport the products?

A: We transport them to Taunggyi, Meiktila, Mandalay and Yangon.

 

Q: How is the price of Mario Napakpi Fermented Soya Bean per viss?

A: It is K6,000 per viss.

 

Q: How is the price of a bag of spicy dried fermented Soya bean seed?

A: It cost K35,000 per bag last year and now it is K68,000 per bag. Therefore, we sold a viss of Maroi Napakpi Fermented Soya Bean at K4,000 before and it is now K6,000.

 

Q: How are the ways to eat the Maroi Napakpi Fermented Soya Bean?

A: We can fry it and grill it, and eat sprinkling the cooking oil over it.
